Now that the kids are back to school and the farmer’s markets are overflowing with delicious produce, we’ve been cooking up a storm. Here’s what we’ve been loving lately:
Cobb Salad with fresh local veggies, eggs & bacon:
Berry Bread: a great on-the-go breakfast or special treat in a lunchbox:
Zesty Quinoa Salad: great for adults and adventurous kiddos, we add avocado and local fresh corn!
Our favorite, fool-proof hard-boiled egg recipe:
Pumpkin Gnocchi: Huge crowd pleasure! We skipped the final step and just added sprinkled parmesan cheese for special dinner treat. *Gluten-free families, we make them with GF all-purpose flour and they came out great: These are next on our to-do list**We made these…they rock. Seriously make them this weekend.They take a bit of fine tuning (like not burning the entire first batch, try 8 mins instead of 15), but are totally worth the effort once you get the hang of it. Also gluten-free families, we substituted out the flour for all-purpose gluten-free flour from Middlebury Coop and it worked perfectly.
